My second visit here was for their comparatively good value Weekend Wine Lunch. Unlike some HK restaurants that have 2 stars, I think that Amber would still hold them if it was rated in any of the guides throughout the world.

Kohlrabi ‘cooked’ in lime juice & manni olive oil aka uni & schrenki caviar
Line caught john dory wrapped in fresh wakame & steamed then served in frothy fukuoka clam emulsion with buana negi infused extra virgin olive oil
Wild venison leg; roasted with caramelized parsnip roasted william pear & sauce poivrade
Quince steamed with ‘vin jaune’, caramelized straw with lemon curd, hokkaido milk & taiyouran egg yolk ice cream
